Insolite Red
Tasting notes:
A very original expression of the Cabernet Sauvignon and Cabernet Franc grape varieties for this cuvée.
On the nose, we find a nice marriage of red fruits, raspberries, blackcurrants and spices such as black pepper.
On the palate, the texture is fine with a nice tension bring airy and floral scents. The finish is flowing and very crisp.
Food and wine pairing:
Magnificent with a Sétoise tielle, fried red mullet or beef tataki.
Also to be tested as an aperitif with figs with Parma ham or rillons.
Service:
Serve at 15ºC
Vineyard,terroir and vinification:
A late harvest so as not to fall on the vegetal notes of these grape varieties.
A long and very delicate maceration to extract only the purity of the fruit, aging in stainless steel to preserve this freshness.

Alcohol: 14.5%
Sulphites: >14 mg/l
A slight deposit of crystals is a natural phenomenon.
